What I Eat in a Day as a FINAL YEAR UNI STUDENT in ISOLATION (Home Workout + Staying Motivated) How are you guys adapting to these changes and what things are you doing to stay sane, pass time and most importantly re find purpose?!

RECIPES:

BREAKFAST - Chocolate Vanilla Biscoff Protein Oats
1/2 cup quick cook oats
tbsp cacao powder
1/2 scoop vivo vanilla perform
pinch of stevia
chunk of grated courgette
200ml water
1. cook oats in microwave with courgette and water for 3 minutes
2. mix cacao power, protein and stevia with water to form a thick paste
3. mix protein paste into oats
4. top with biscoff and fruit

LUNCH - leftovers
sorry I don't have the exact recipe for the vegan chilli BUT it is essentially
1. fry veggies of choice (LOTS OF VEG) with garlic and onion, add turmeric, paprika and chilli too.
2. add in 2 tins tomatoes, 1 tin beans, 2 small handfuls of quinoa or bulgar wheat, add in 1.5 tsp stock paste in 150ml water or 200 ml stock made up and let cook/absorb.

This is great to batch cook and freezes well too! i served mine with greens, vegan burgers, hummus dressing (hummus thinned with garlic, salt, lemon juice and water) and hot sauce.

DINNER - PASTA
1. cook your red lentil pasta/any pasta you have.
2. when nearly finished, add in veggies of choice.
3. once cooked/drained, stir in spices of choice, lemon juice, crushed garlic, a drizzle of olive oil, lots of salt and nutritional yeast.

served with greens, hummus and hot sauce!
